Bulles = Bubbles
A champagne tasting.!
Upon the occasion of Bethany being in town, we decided to do a champagne tasting at Lady 1000 Bulles.
Nestled in the 17eme, the shop is a cozy little place, lined with champagne bottles, red velvet chairs and lounges. And an amazing, incredibly practical chandelier.
The tasting consisted of four glasses -

1) A brut made from the chardonnay grapes of Champagne, aged 18 months. Tiny bubbles (measure of high quality), unbelievably light and delicious. My favorite. I would sip this endlessly.
2) A brut made from the pinot noir grapes (But you thought pinot noir grapes made red wine? The grapes have a red skin and a white flesh. Champagne makers only use the interior white fruit.), aged 18 months.
3) A 30%/70% combination of chardonnay/pinot noir grapes from 2003. Typically, champagne is flat and no longer desirable at this age but it had been a very good crop of grapes that year and henceforth the longevity of the bubbles. With this we were served homemade foie gras with a shallot or rose champagne confiture.
4) A rose champagne! Made from the pinot noir grapes and letting the skin sit with the mixture for a small of amount of time to give it its rosy shade. An equally pink and adorable desert came with this - red fruit, cream, sprinkled with rose sugar and topped with a rose biscuit.
Very reasonably priced at 25euro. It is given completely in French, but even at my elementary level, I could understand much of what was said. Go check it out!
